Butter cookies is my all time favourite cookies to make at home. It is the simplest cookie you can make at home. All you need is butter, sugar, and flour. This butter cookie recipe is milky version with a bit tweak. It tastes softer, milky, and less sugary than the regular butter cookies. I prefer soft cookies, or softer. I feel they are easier on my teeth.

The place I grew up had lots of peach trees. Every spring, the pink peach flowers are everywhere. The are so pretty, and they decorates the city. When there is soft breeze, the flower petals swaying in the wind, and coving the ground like pink snow. Spring is in the air.

I created this recipe to remember the beautiful romantic pink spring. In China, the peach blossom luck means good luck in dating relationship. We wish you all have happy relationships no matter where you are.

Butter Cookies
Butter cookies before bake

Ingredients of Butter Cookies:

Cake Flour: 2 cups
Unsalted Butter: 1/2 cup
Icing Sugar: 1/2 cup
Vanilla Extract: 1 tsp
Condensed Milk: 2 tbsp
Egg Yolk: 1
Beet Juice: 1 tsp or as needed
Oil: 1 tsp for brush the cookie mold

Equipment: 

Peach flower cookie mold: 1

Instructions:

  1. Place room temperature butter in a large bowl.
  2. Add 1/2 cup icing sugar, 1 tsp vanilla extract, 2 tbsp condensed milk, and 1 egg yolk. Mix well and the knead it to a dough.
  3. Set aside for 15 mins.
  4. Took 1 tbsp dough out, and roll it to a ball. Set aside, and cover with a plastic wrap.
  5. Then add 1 tbsp beet juice or as needed to the rest of the dough to adjust the colour.
  6.  Once the colour is adjusted to pink, then separate the dough to 16 equal portions.
  7. After that roll each portion into a ball.
  8. Use a brush to gently brush oil into the cookie mold before using.
  9. Next, place a 1/16 tsp original cookie dough to the centre of the cookie mold to make the stamens.
  10. Then put one of the pink cookie ball into the mold.
  11. Press the cookie mold on a baking sheet or a desired baking pan. Then release it from the mold, and the cookie is made.
  12. Repeat to complete the rest, then bake at 375F for 11-12 mins.

Tips for Butter Cookies:

  • If you do not have cake flour, use he cake flour replacement – all purpose flour and corn starch or just all proposer flour
  • To prevent the stickiness of the cookie mold, brush a thin layer cooking oil before use.
  • Cookie is easily burn, and each oven is different. Keep an eye on it when baking in the oven to avoid burn.
  • Cookies will loose a little bit colour while baking, the colour is supposed to be darker than expected before baking.
