This coconut brownies with pecans recipe is less sugary, nutty, packed wth cocoa and coconut flavour. This is made of all natural ingredients, and super affordable. I wish you can smell and taste it. It is like cakeish when it is hot right out of the oven and fudgy once it is cool down. I enjoy both fresh hot out of the oven, and the over night version. The pecans are so nutty and crunchy, even after over night in the fridge.

Pecan halves: 1/2 cup (optional)
Large eggs: 4
Baking powder: 1 tsp
Vanilla extract: 1 tsp

Coconut flakes: 1/4 cup (optional)
Prep Time: 10 mins
Cooking Time: 20-30 mins
Total Time: 30 mins

Instruction:
- Butter the pan, oil spray also works.
- In a medium bowl, combine flour, baking powder, and salt. Mix well.
- Warm up the butter and coconut cream in a sauce pan.
- Add sugar, cocoa powder, eggs one at a time, and vanilla extract. Mix well.
- Add the dry ingredients.
- Add 1 cup of chopped pecans.
- Pour the batter into the 9×9 pan, and make it even.
- Add pecan halves on the top if you are a pecan lover (optional).
- Bake for 20 – 30 mins till it’s done.
- Cut while it is warm or once it is cool down.
- Sprinkle coconut flake on top when serve(optional).
Tips:
- Mix the dry ingredients well, it helps the brownie raise evenly.
- Glass pan cooks faster. I usually bake 20-25 mins. If it is a metal pan, bake 25-30 mins.
- Use brown sugar instead for a better flavour, less sugary, and more fudgy taste and texture.
