This coconut brownies with pecans recipe is less sugary, nutty, packed wth cocoa and coconut flavour. This is made of all natural ingredients, and super affordable. I wish you can smell and taste it. It is like cakeish when it is hot right out of the oven and fudgy once it is cool down. I enjoy both fresh hot out of the oven, and the over night version. The pecans are so nutty and crunchy, even after over night in the fridge.

What are the 3 types of brownies?

Cake, fudge, and chewey.

Cake brownies contains a bigger portion of flour, and normally use butter as oil ingredient. Fudge brownies contains a bigger portion of eggs, or egg whites, also use butter as oil ingredient. Compare to chewy brownies, the secret ingredient is canola oil.

Is coconut brownie with pecans healthy?

Consume cocoa powder daily can reduce risks of heart disease and strokes. It also improves blood sugar levels and cholesterol, reduces inflammation, as well as prevent cancer.

Pecans are rich in calcium, magnesium, and potassium. It helps lower blood pressure.

The most important thing, it makes me feel happy when I eat it, healthy? In a way.

Ingredients:

Flour: 1 1/3 cup

Sugar: 1 1/4 cup

Brown sugar: 1/3 cup (optional)

Unsalted butter: 1 cup

Coconut cream: 1/2 cup

Cocoa powder: 1 cup

Chopped pecans: 1 cup

Pecan halves: 1/2 cup (optional)

Large eggs: 4

Baking powder: 1 tsp

Vanilla extract: 1 tsp

Salt: 1 tsp

Coconut flakes: 1/4 cup (optional)

Prep Time: 10 mins
Cooking Time: 20-30 mins
Total Time: 30 mins
Serving: 9 – 16

Instruction:

  1. Butter the pan, oil spray also works.
  2. In a medium bowl, combine flour, baking powder, and salt. Mix well.
  3. Warm up the butter and coconut cream in a sauce pan.
  4. Add sugar, cocoa powder, eggs one at a time, and vanilla extract. Mix well.
  5. Add the dry ingredients.
  6. Add 1 cup of chopped pecans.
  7. Pour the batter into the 9×9 pan, and make it even.
  8. Add pecan halves on the top if you are a pecan lover (optional).
  9. Bake for 20 – 30 mins till it’s done.
  10. Cut while it is warm or once it is cool down.
  11. Sprinkle coconut flake on top when serve(optional).

Tips:

  • Mix the dry ingredients well, it helps the brownie raise evenly.
  • Glass pan cooks faster. I usually bake 20-25 mins. If it is a metal pan, bake 25-30 mins.
  • Use brown sugar instead for a better flavour, less sugary, and more fudgy taste and texture.
