French onion soup is a delicate soup made of sweet onion, beef broth, cheese and some spices. Add some bread with the melted cheese on top, it is defiantly a comfort food. Onion has many health benefits, which is including reduced risk of cancer, lower blood sugar levels, and anti-inflammatory. The beef stock defiantly helps with bone health. Once you taste it, you will never forget it. It is so delicious.

Which onions are best for French onion soup?

To make it the classic way, you will need yellow onions. Actually, you can use any type of onions, such as white, yellow or red onions. I prefer to use a mixture of yellow and red onion for a better soup colour.

What is the difference between onion and French onion soup?

Onion soup normally made of a mixture of variety types of soups, and the soup stock can be vary. French onion soup is usually made of yellow onion, beef stock, and a shot of sherry. It topped with bread or croutons with Gruyere cheese. I prefer to use 3 types of cheeses, including Gruyere, Provolone, and Parmesan. The perfect caramelized onion adds tons of flavour in the soup.

Ingredients:

Yellow onion: 1 and 1/2
Purple onion: 1
Butter: 2 tbsp
Beef stock: 4 cup
Wine or sherry: 2 shot
Thyme: 1 tsp
Salt: 1 tsp
Black pepper: 1 tsp
Bread or croutons: 2 cup
Gruyere: 1/4 cup
Provolone: 1/4 cup
Parmesan: 1/4 cup

Prep Time: 15 mins
Cooking Time: 1 hr 5 mins
Total Time: 1 hrs 20 mins
Serving: 4

Instruction:

  1. Chop yellow and purple onions to thin slices.
  2. Add butter in a pot, once it is melted, add all the onions into the pot.
  3. At medium high heat, sautéed the onions until it starts to caramelize, it is about 45 mins.
  4. Turn the heat to medium low, meanwhile stir frequently to avoid the onions burning. Let the onion caramelize.
  5. Once it is caramelized, add 2 shots of wine or sherry, beef stock, thyme, slat and pepper, then turn heat to high.
  6. Once the soup starts to boil, turn heat to low, simmer for 15 mins.
  7. Place the soup mixture in 4 ramekins or oven safe soup bowls, add bread, Gruyere, Provolone, and Parmesan cheese on top.
  8. Place the ramekins or soup bowls on a baking sheet, bake at 425F until cheese bobbles, it is about 5 mins.
  9. Cool down 2 mins before serve. Enjoy.

Tips:

  1. Any type of onion works. I refer less sweet, so I normally I use a mixture of white onion, yellow onion, and purple onion.
  2. Add 2 bay leaves in beef stocks, it adds more flavour.
  3. You can also use chicken stocks, add 1 extra tsp thyme will enhance the flavour.
  4. Provolone cheese can be replaced by Swiss cheese. Gruyere cheese is a must have, it is the highlight of French onion soup.
  5. If you prefer the cheese to be a little bit burned, use broil for 1 minute before take the ramekins out of the oven.
