Tomato and egg are one of the perfect matches. There are many tomato and egg dishes in Chinese cooking. The tomato and egg noodles are one of the most popular noodle dishes in China. It is tasty, easy to make, affordable. Delicious food does not need to be expensive sometimes. Try this out, and let us know how do you like it.

What does Tomato and Egg Noodles Taste Like?

It is savoury, salty, the scrambles eggs are fluffy soft and soaked in fresh tomato sauce. Every bite of the noodles is a combination, and it makes the mouth watery. What can I say, you just have to try it.

Cooking Time: 8 mins
Total Time: 10 mins
Serving: 2

Ingredients: 

Tomato: 3 medium size (or 2 large size)
Egg: 2 large
Dried Noodles: 2 Bunches
Green Onion: 1 tbsp chopped
Cooking Oil: 4 tbsp
Salt and Seasoning: Pinch
Some green onion or cilantro and sesame oil to garnish.

Instruction:

  1. Place the dried noodles in a boiling pot, and cook 4-6 mins as per package instruction.
  2. Then cut tomato into small pieces.
  3. Then chop the green onion, and cilantro (optional).
  4. Beat 2 large eggs in a small bowl, and add pinch salt.
  5. Pour 2 tbsp cooking oil in a pan on medium high heat, once oil is heated, then pour over the egg mixture, and make fluffy scrambled eggs.
  6. Place the scrambled egg in a bowl, then set aside.
  7. Once the oil is heated, place 1 tbsp chopped onion in the pan, and fry till there is a smell of nice onion aroma, which is about 5-10 seconds.
  8. Add tomato in the pan, fry for 1 minutes, then turn heat to low. After that, cover with a lid slow cook for 2-3 mins.
  9. Add salt and seasoning, and 1/2 water, then mix well.
  10. After that, add the scrambled egg back in to the pan, mix well. The sauce is ready.
  11. Raines the cooked noodles in cold water, then place it in 2 bowls.
  12. Pour the tomato and egg sauce over the noodles, then garnish with green onion, cilantro, and drips of sesame oil.

Tips for Making Tomato and Egg Noodles:

  • Add a pinch salt in the egg mixture helps the egg taste better in this dish.
  • Medium high heat makes the egg fluffy.
  • Simmer the tomato sauce for a few minutes make the sauce healthier and flavourful.
  • Raines the noodles in cold water for 10 seconds to prevent the stickiness once transfer it to the bowl.
  • But if you prefer a hot bowl of noodles, without Raines is also optional.
