Cold Sesame Noodles is a really popular noodle dish in China, especially in summer time. It is fresh, creamy and can be mixed with any type of raw vegetable you prefer. This recipe is more like a noodle salad in a way. It is also healthy, and vegan. The sesame paste bring a creamy nutty flavour to this dish, and the vegetables provides tons of nutrients.

What does Cold Sesame Noodles Taste Like?

It is creamy, nutty, salty and mix with fresh crunchy vegetables. It is rich in sesame flavour. This recipe is a noodle dish. If you would like, add more vegetables, and you can make it a salad.

What if I Do not Have Sesame Paste at Home? What Can I use as alternative for Sesame Paste?

Peanut butter. Unflavoured pure peanut butter can be replaced to sesame paste. The nutty flavour are similar. If you use the natural peanut butter with sea salt, red the salt amount in this recipe. It tastes pretty good as well.

Ingredients:

Sesame Paste: 1/2 cup
Chilled Bolling Water: 2 cup
Salt: 2 tsp
Seasoning: Pinch
Sugar: 1 tsp (optional)
Soy Sauce: 1 tsp (optional)
Asian Dried Noodles: 2 Bunch
Mini Cucumber: 2 or as needed
Cherry Tomato: 2 or as needed

Instruction:

  1. In a pan, boil dried noodles for 4-6 mins as per package instruction.
  2. Add 4 tbsp sesame paste in a medium bowl, then add 1 tbsp water, mix well.
  3. The sesame paste is dry, keep adding water 2 tbsp at a time until the 2 cups water is finished.
  4. Add salt, seasoning, sugar (optional), and soy sauce (optional), then mix well.
  5. Cut cucumbers into 2 inch long strips. And each the tomatoes.
  6. Drain the boiled noodles, then rinse in the cold water.
  7. Please the noodles in bowls, and pour the sesame sauce over around the edges.
  8. Top with cucumbers and tomatoes. Ready to Serve.

Tips for Making Cold Sesame Noodles: 

  • For the creamy sesame sauce, add water first and a bit at a time. Otherwise, the sauce will become loose.
  • For a better texture, add all spices at the end of the making sesame sauce.
  • For a better texture, rinse the noodles in cold water, or wash it in the cold water. It will make the noodles taste bouncer, and smoother.
  • Vegetables are alternative. Celery, carrots, radishes, bean sprouts, and greens leaves are also good options.
